BKNA is pleased to present a special culinary event “A Night in Oaxaca” at Bixby Knolls’ very own ChefTech Cooking School on Saturday, May 20 at 5:30. Chef/Owners Teri and Jorge Villanueva will guide us through an evening of preparing and enjoying a four-course meal featuring delicious specialties from Oaxaca, Mexico. The state of Oaxaca, located in far south/west portion of Mexico, is internationally celebrated for its unique cuisine using a wide variety of ingredients and preparations.
BKNA has held similar cooking school/party events at ChefTech over the past years and each has been enthusiastically enjoyed by attendees. We are especially excited to offer you this opportunity to discover Oaxacan cuisine because Chef Teri Villanueva studied authentic Mexican cooking in Veracruz and Oaxaca with culinary superstar and Mexican cookbook author, Rick Bayless. Teri is a graduate of the Culinary Institute of America in Hyde Park, N.Y. and has worked in professional kitchens and teaching people to cook for the last 25 years.
The Menu for NIGHT IN OAXACA
Garnachas Istmeñas – mini-corn tortillas topped with asiento(cracklings), shredded chicken, pickled red onion, salsa de chile de arbol ( a small spicy red dried chile), and cotija cheese (Mexico’s version of Parmesan cheese).
Enfrijoladas with Chorizo – corn tortillas dipped in Oaxacan Black Beans made with Epazote ( a fresh herb) and Golden Manteca (rendered lard from frying pork skin), folded and served with Oaxacan Chorizo de Bolita (small, round red sausages), Sliced Onions, Sliced Avocado, and Queso Fresco (a soft, fresh cheese)
Mole Verde de Chayote y Camaron – a light and soupy Green Mole made with fresh herbs and simmered with Chayote ( a light green squash, aka mirliton in English) and Shrimp
Passion Fruit Coconut Nicuatole – a corn masa sweet chilled dessert, fruit flavor subject to change
Agua de Jamaica – Fresh Water made from Hibiscus Flowers
This exciting event can accommodate only a small number of people and always fills up quickly. There are only a few spaces still available. ChefTech is located at 3842 Atlantic Ave. This cooking class and four course meal is offered at $95 per person.
As shown above, the meal includes a refreshing flavored water typical of the region. Oaxaca is also known for Mezcal, a distilled alcoholic drink made from Agave. As with past ChefTech events you are invited to bring any special beverage you wish to enjoy yourself or share with others. In keeping with the Oaxacan theme, we suggest you consider bringing Mezcal.
